Crispy Potato and Pea Samosas - The Traditional Recipe

Ingredients:

For the Dough:

  • 2 cups all-purpose flour

  • 1/4 cup vegetable oil

  • 1/2 teaspoon salt

  • Water, as needed

For the Filling:

  • 4 large potatoes, boiled and mashed

  • 1 cup green peas, boiled

  • 1 tablespoon vegetable oil

  • 1 teaspoon cumin seeds

  • 1 large onion, finely chopped

  • 2 green chilies, finely chopped

  • 1 teaspoon ginger-garlic paste

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1/2 teaspoon garam masala

  • Salt, to taste

  • Fresh coriander leaves, chopped

For Frying:

  • Vegetable oil

Instructions:

  1. Prepare the Dough:

  • In a large mixing bowl, combine the all-purpose flour, salt, and vegetable oil.

  • Gradually add water and knead the mixture into a smooth, firm dough.

  • Cover the dough with a damp cloth and let it rest for 30 minutes.

  1. Prepare the Filling:

  • Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.

  • Add chopped onions and green chilies. Sauté until the onions become translucent.

  • Stir in ginger-garlic paste and cook for a minute until the raw aroma disappears.

  • Add turmeric powder, ground coriander, ground cumin, and garam masala. Mix well.

  • Add boiled and mashed potatoes, boiled peas, and salt. Combine the ingredients thoroughly.

  • Cook the mixture for 5-7 minutes, allowing the flavours to meld. Finish with fresh coriander leaves. Set aside to cool.

  1. Shape and Fill the Samosas:

  • Divide the rested dough into equal-sized balls. Roll each ball into a thin oval or circle.

  • Cut the circle in half to form two semi-circles.

  • Create a cone by folding one semi-circle and sealing the edges with a little water.

  • Fill the cone with the prepared potato-pea mixture and seal the open edge to form a triangular samosa. Repeat for all samosas.

  1. Fry the Samosas:

  • Heat vegetable oil in a deep pan for frying.

  • Once the oil is hot, carefully slide in the samosas, a few at a time, and fry until they turn golden brown and crispy.

  • Remove the samosas using a slotted spoon and place them on a paper towel to absorb excess oil.

  1. Serve and Enjoy:

  • Serve the crispy potato samosas hot with your favourite chutney or sauce.
