I always fall back on this recipe whenever I have guests coming over for a meal and I need a vegetarian addition to my menu. It's wholesome and is a joyous burst of flavours in the mouth. It's very easy to prepare and can be used as a brilliant filling in wraps, sandwiches and pies.
All you'll need is:
250 grams of cottage cheese also known as paneer
3 long red chillies
3 tomatoes
1 medium onion
3-4 cloves of garlic
1/2 tsp turmeric
1/2 tsp red chilli powder
1/2 tsp coriander powder
oil
salt
Method:
Blend the onion. tomatoes, chillies and garlic together. Now take a pan and fry the cubes of paneer with the spices on medium heat. Once they're slightly brown remove them from the pan and pour the blended mixture in the same pan and cook for a while before pouring in half a cup of water. Now cover and let the gravy simmer for 10 minutes. Once the oil starts separating, add in the paneer cubes and cook for another 5-6 minutes.
Enjoy with some naan breads or steamed rice.
