This effortless recipe is one of my favourite Instant pot chicken curries because it's effortless- without the pains of chopping onions and tomatoes or any other major meal prep.
With just a few ingredients, and just 1 pot (in my case, my trustee Instant Pot) this recipe makes it to one of the top spots in my 'awesome meals with minimal effort' recipes list. Enjoy the tender chicken soaked in the richness of a sweet and savoury curry that goes brilliantly with steamed rice.
Ingredients:
Pre-chopped Chicken Thighs (bite size pieces)
1 teaspoon brown or white sugar
oil for cooking
1 Tbs garlic paste
lemon juice - 1 Tbs
I/2 a can thick coconut milk
1 tsp red chilli powder
salt for seasoning
Method:
Smother the chicken with the garlic paste, lemon juice and salt.
Turn on the Instant Pot to the Saute mode and put the heat to 'more'.
Put in 3 Tbs of Olive Oil and put in the sugar and red chilli powder.
Stir the sugar around and once it melts, put in the chicken.
Let the chicken fry till it turns brown - this should take 15 minutes.
Once browned, pour in the coconut milk.
Season with salt and fix the lid and set it on for 10 minutes to cook in pressure.
Wait for all the pressure to vent and only then open the lid.
Your curry is now ready! Enjoy with some steamed rice or garlic bread. This also serves as a perfect low-carb and Keto friendly meal.
