Strawberry Cupcakes - Vanilla cake infused with fresh strawberries


These cupcakes make the best companion to your cup of evening tea or coffee and it certainly is a match made in heaven when enjoyed with a glass of milk. If you have children at home - whether kids or teens - these aren't going to last very long! So follow my lead and make a big batch! This recipe make about 24 medium sized cupcakes. You can adjust the quantity of the ingredients accordingly to make a smaller batch - which I wouldn't advise!


Ingredients:

  • 4 cups of white flour

  • 2 cups of sugar

  • 1 cup of salted butter

  • 2 eggs

  • vanilla - a splash

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 2 cups of warm milk

  • fresh strawberries

  • 1 tsp brown sugar for the strawberries

Method:

  • Beat the butter, sugar, eggs and vanilla together then drizzle one cup of warm milk into the batter while still beating.

  • In a separate bowl mix the flour, baking powder and baking soda together.

  • Now in small batches, combine and mix with the wet batter.

  • Now pour in another cup of warm milk and bring the batter to a smooth consistency.

  • In a plate, sprinkle 1 tsp of brown or white sugar on the chopped strawberries and mix it with the cake batter.

  • Dollop one scoop each into the cupcake liners.

  • Into a pre-heated oven they go for 12-15 minutes at 180 degrees.


Enjoy with your cup of tea or coffee OR as a blissful dessert with a scoop of vanilla ice-cream and a drizzle of strawberry syrup.
