These cupcakes make the best companion to your cup of evening tea or coffee and it certainly is a match made in heaven when enjoyed with a glass of milk. If you have children at home - whether kids or teens - these aren't going to last very long! So follow my lead and make a big batch! This recipe make about 24 medium sized cupcakes. You can adjust the quantity of the ingredients accordingly to make a smaller batch - which I wouldn't advise!
Ingredients:
4 cups of white flour
2 cups of sugar
1 cup of salted butter
2 eggs
vanilla - a splash
2 tsp baking powder
1 tsp baking soda
2 cups of warm milk
fresh strawberries
1 tsp brown sugar for the strawberries
Method:
Beat the butter, sugar, eggs and vanilla together then drizzle one cup of warm milk into the batter while still beating.
In a separate bowl mix the flour, baking powder and baking soda together.
Now in small batches, combine and mix with the wet batter.
Now pour in another cup of warm milk and bring the batter to a smooth consistency.
In a plate, sprinkle 1 tsp of brown or white sugar on the chopped strawberries and mix it with the cake batter.
Dollop one scoop each into the cupcake liners.
Into a pre-heated oven they go for 12-15 minutes at 180 degrees.
Enjoy with your cup of tea or coffee OR as a blissful dessert with a scoop of vanilla ice-cream and a drizzle of strawberry syrup.
